Armed with red SAIL caps, researchers from the University of Amsterdam, Wageningen University & Research and the University of Groningen took to the quays during SAIL 2025. The research collaboration with SAIL Amsterdam began last November, when Eline Elbersen contacted SEVEN. Within a few months researchers commenced a research process that led to various field experiments. The aim of these studies was to see how sustainable and healthy food choices could be encouraged among SAIL visitors.

This type of research is only possible by cooperating with industry partners and societal organisations. SEVEN is grateful to the SAIL organisation and all the caterers for their trust and enthusiasm in embarking on this journey and opening doors to science.
